I would try experiementing with some of the different ones, to see which one works best for your situation. There are many factors that go into it besides video quality, including sound quality, size, etc. Consider where this is going to be playing from: Internet? CD? Hard Drive? All of these make each situation different, so I can't specifically tell you which ones to use. If you're just looking for video quality, and its only video (ie. no graphics, etc), I've had luck with the Sorenson and Sorenson 3 codecs. But they make large files. Play around and see what works best for what you need.
