Magic Bullet is a somewhat pricey but very cool plugin for After Effects. It was created by some former employees of Industrial light and magic. Ive heard it has some very cool film simulating filters for video, as well as seemingly endless other options for manipulating the look of your film. I'm not 100% on this, but I think the exterior shots when he was in the 'dream' was where MB was used. Although, they may have just masked out only the sky. Ya know ... to give it the vanilla sky's of monet's paintings feel.
AE is scalable, meaning when we work with our 720x480 video, it's the same interface as a 4k film scan (well, not completely because they'll use proxies). For the most part, however, when there's complex compositing going on for larger budget projects, pros use a inferno or shake-type compositors because they are better designed to work with huge files. And, one of my favorite apps, commotion, is sometimes used too. Although it's more akin to Combustion and AE PB.
