I know that low-budget effects often use coffee grounds mixed with fake blood to create gore.

I was trying to achieve this effect while reediting an old movie I made a couple years ago. I went to detonationfilms.com where I get muzzle flashes and they now have a good number of blood spraying effects. If the shot is locked down on a tripod, you could probably get some gore in post.
