I'm sure there is a textbook answer and I don't have that one. I also think this is a very subjective answer - differing from individual to individual.
That said, my opinion of a good script is one that has a beginning, middle, and end (not necessarily in that order - MEMENTO?). There is no gratuitous violence, nudity or profanity, but all three are there if they support the story. All characters are well developed and play a part in the overall story (there are no throw-away characters).
The story mesmerizes and engages the audience. Cliches and atypcial plot lines are kept at a minimum (girl runs from killer, fumbles her keys at the door lock, gets caught). You may not fully agree on various points of the story with others, but can debate those points for days, afterwards.
A big plus: if it is a script of a genre that you do not particularly like (say you dislike westerns, but go to see this western movie with a good script), and you LIKE IT! That's good!
It must entertain. If it doesn't entertain, I'm not sure why it's out there (not to include student films, test films, etc., however there is no reason why student films can't be entertaining too!). Of course, this is just my opinion. I'm sure there are those with more experience that can explain a bit more eloquently.
