ROTK is excellent. The Aliens special edition is also quite good - not sure when it came out though. My favorite special feature on any DVD, though, is Kieslowski's "Cinema School," which is on Blue, White, and Red. He deconstructs and analyzes a critical scene from each film. It's extremely insightful and gives you a much better understanding of the structures of the films.
